Ingredients:
- 2 cups of fresh shiitake mushrooms, sliced
- 1 large onion, thinly sliced
- 2 cloves of garlic, minced
- 1 cup of shredded cheddar cheese
- 4 large flour tortillas
- 2 tablespoons of olive oil
- Salt and pepper to taste
- Fresh chives, finely chopped, for topping
- Sour cream, for topping
Instructions:
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the onions and cook until they become soft and caramelized, around 10-15 minutes. Remove the onions from the skillet and set them aside.
- In the same skillet, add another tablespoon of olive oil and toss in the garlic and shiitake mushrooms. Sauté until the mushrooms are tender and have released their juices. Season with salt and pepper.
- Lay out a tortilla and spread half of the caramelized onions over one half of the tortilla. Layer half of the sautéed shiitake mushrooms on top of the onions, followed by a generous sprinkle of shredded cheddar cheese.
- Fold the tortilla in half over the fillings, pressing lightly. Repeat the process with the remaining tortillas and fillings.
- Heat a clean skillet over medium heat. Cook each quesadilla until the tortilla is golden and the cheese is melty, about 2-3 minutes on each side.
- Cut the cooked quesadillas into wedges and serve them hot, garnished with fresh chives and a dollop of sour cream.
