In case you didn’t know, you don’t need apples to make a delicious, homemade apple pie. Just zucchini! Turn your zucchini harvest into a decadent dessert that will fool all your friends and family. I dare you to tell the difference!

Ingredients:
- 4 cups peeled, seeded, and sliced zucchini (about 2 medium-sized zucchinis)
- 1 tablespoon lemon juice
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 3 tablespoons all-purpose flour
- 1 tablespoon butter
- 1 pre-made double pie crust
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large saucepan over medium heat, cook the zucchini with lemon juice, frequently stirring for about 15 minutes, or until zucchini is tender.
- In a separate bowl, combine granulated sugar, brown sugar, cinnamon, nutmeg, and flour. Mix well.
- Add the sugar-spice mixture into the saucepan with zucchini, stirring well to evenly coat the zucchini slices.
- Lower the heat and simmer the mixture for about 5 minutes, until the filling has thickened.
- Remove from heat and stir in butter until it’s completely melted and mixed in.
- Lay one pie crust in the bottom of a 9″ pie dish. Pour the zucchini mixture over the crust, spreading it evenly.
- Cover the filling with the second pie crust. Trim and crimp the edges. Make several slits in the top crust to allow steam to escape.
- Bake in your preheated oven for about 35-45 minutes, or until the crust is golden and the filling is bubbly.
- Allow the pie to cool before serving to let the filling set. Serve with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.
